Gardein Orange Chick'n and Rice

Ingredients (6 servings)

1 12 cup jasmine rice

1 red onion, sliced

1 tbsp coconut oil

2 tsp salt

21 oz gardein mandarin orange crispy chick’n

2 tbsp olive oil


  1. Heat coconut oil in a rice pot over medium heat.
  2. Add rice and fry for 2 minutes, stirring frequently.
  3. Add 3 cups of water, and turn heat to high.
  4. When boiling, cover and turn heat to low. Cook until all water has evaporated.
  5. Heat half of the olive oil in a 12-inch pan over medium heat.
  6. Add sliced onions to the pan and fry for 5 minutes, stirring occasionally. Remove from heat and transfer to plate.
  7. Heat remaining olive oil in the same 12-inch pan over medium heat.
  8. Sauté mandarin orange chick'n in 12-inch pan for 6-8 minutes, until brown and crisp on both sides.
  9. Add sauce and toss with chick'n for about 1 minute. Remove from heat.
  10. Serve chick'n with rice and any other sides you may like.
