Ingredients (4 servings)

2 tbsp nutritional yeast

1 tsp chili powder

1 tsp cumin

1 tsp salt

1 tbsp olive oil

34 tsp turmeric

12 tsp garlic powder

15 oz black beans (canned), drained and rinsed

1 red bell pepper, chopped

2 garlic clove, minced

1 yellow onion, chopped

12 oz tofu (firm), cubed

8 slices whole wheat bread

1 avocado, sliced

15 oz corn (canned), drained and rinsed

Instructions

  1. In a bowl, combine nutritional yeast, chili powder, cumin, salt, turmeric, and garlic powder. Set aside.
  2. Heat 1 tbsp of olive oil in a 12-inch pan over medium-high heat until hot.
  3. Add the minced garlic and chopped yellow onion to the pan and cook for 3 minutes, stirring often.
  4. Add the chopped red pepper to the pan and cook for 5 minutes.
  5. Add the cubed tofu to the pan and cook for 3 minutes.
  6. Add the corn and black beans along with the seasoning mix from step 1 and cook for 3 minutes. Remove from heat.
  7. Serve immediately with whole wheat toast and slices of avocado on the side.
