Ingredients (6 servings)

12 cup pine nuts

2 garlic clove, roughly chopped

1 tsp black pepper

1 tbsp lemon juice

3 tbsp nutritional yeast

1 cup cherry tomatoes, cut in halves

4 tsp salt

2 cup basil (fresh), tightly packed

16 oz rotini

3 tbsp olive oil

Instructions

  1. Boil water in a large pot. Add rotini and 1 tbsp of salt and cook for about 10 minutes.
  2. Combine basil, pine nuts, and garlic cloves in a food processor and pulse until ingredients are coarsely ground.
  3. Add nutritional yeast, lemon juice, olive oil, salt, and pepper to the mixture and pulse until a paste forms.
  4. Drain pasta. Combine with cherry tomato halves and pesto sauce and serve.
